Goji & Cardamom No Bake Cookie Balls

 

INGREDIENTS

1 packed cup pitted Medjool dates

1 cup cashews

½ cup unsweetened shredded coconut, plus more to roll in

1 tablespoon raw honey or maple syrup

½ teaspoon vanilla

½ teaspoon Himalayan sea salt

½ cup goji berries

1 drop of doTERRA Cardamom essential oil

 

DIRECTIONS

Place cashews in a food processor and pulse until crumbly, not completely smooth. Next, add dates, coconut, honey (or maple syrup), vanilla, cardamom, and sea salt. Process until combined. (It will be sticky.) Towards the end of combining, add the goji berries.  Using a small spoon, scoop out and roll the mixture into bite-sized morsels. Optional, roll balls in additional shredded coconut.  Place in refrigerator or freezer for at least an hour before serving. Store remaining cookie balls in an airtight glass container up to 3 days in the refrigerator or store in freezer.
