Chilled Pea and Mint Soup

Ingredients:

1 Tbsp. olive oil

3 shallots, minced

¼ cup fresh mint, chopped

4-5 cloves garlic (less if you’re not a garlic fan)

2 cups fresh or frozen peas

2 cups vegetable broth

1 cup coconut milk (light or full fat depending on desired creaminess)

½ tsp. sea salt

¼ tsp. pepper

Directions: 

  1. Finely chop the shallots, mint and garlic.
  2. Heat the olive over the low heat in a small pot and add the mint, shallot and garlic
  3. Let it cook softly for about 2-3 minutes, until the shallots turn translucent.
  4. Next, add the peas and broth. Give it a little stir and let it simmer for about 15 minutes
  5. Blend the soup in a blender and add the coconut milk (more or less to desired consistency)
  6. Season with salt pepper and if desired, a drizzle of olive oil.
