Gazpacho

 

For a quick refreshing summer soup, the gazpacho never fails.  In addition, you’ll get a few servings of vegetables in this delicious soup.

4-6 ripe tomatoes

½ small red onion

1 green bell pepper

1 cucumber

2 garlic cloves

2 Tbsp chopped parsley

2 Tbsp chopped basil

2 Tbsp chopped cilantro

2 cups tomato juice

2 Tbsp lemon juice

2 Tbsp balsamic vinegar or sherry vinegar

Dash of hot pepper sauce

¼ cup extra virgin olive oil

Sea salt and freshly ground black pepper

 

Directions:

Coarsely chop the tomatoes, pepper, onion, cucumber and combine with all other ingredients in a high-powered blender.  Blend to desired consistency.  Serve chilled or at room temperature.
