Nori Rolls With Veggies and Cashew Sauce
Instead of the corn or wheat flour tortilla, upgrade to a more nourishing wrap using Nori paper, Boston lettuce, or collard greens. Fill it with favorite veggies and a tasty sauce and you have a delicious lunch. Make the sauce ahead so it’s ready to go for a quick meal.
Nori Rolls With Veggies and Cashew Sauce Recipe
Filling:
Julienned vegetables, such as zucchini, carrots, peppers and cucumber
Avocado, sliced thin
Mango, sliced thin (optional)
Fresh herbs, such basil, mint or cilantro (optional)
Delicious Cashew Sauce:
1/2 cup cashews, soaked for 4-5 hrs, drained
1/4 cup sesame oil or EVOO
2 1/2 Tbsp tamari sauce
Juice of 3 limes (~1/3 cup)
8 dates, pit removed (soaked in 1/2 cup warm water for a few minutes to soften)
1 tsp sea salt
Pinch of cayenne
Black pepper to taste
Directions:
Put all sauce ingredients, including the water to soak the dates, in a powerful blender and blend on high. Sauce can be kept in the fridge up to a week.
Place a Nori paper (or your wrap of choice) on a flat surface.
Spread 1-2 Tbsp of the sauce in a 1” line across the shorter side of the pepper.
Top with veggies and roll tightly. To ‘glue’ the Nori paper closed, put a few drops of water on the edge of the nori paper when you are done wrapping it.
