Purple Potato Chips

Instead of serving bread with your next soup, try these sweet potato chips. If you want to get fancy, add a tasty topping such as pesto or hummus and chopped veggies and you have glorious gluten free tartines.

Chips:

2 medium purple potatoes

Olive oil

Sea salt

 

Directions:

  1. Turn oven to 375 degrees.
  2. Peel (optional) and slice the potatoes in 1/8” slices. Toss in a zip lock bag along with 2-3 Tbsp olive oil and 1 tsp sea salt
  3. Lay flat in a single layer on an oven pan lined with parchment paper.
  4. Bake for 40 minutes, depending on the heat of your oven, these may take five minutes more or less. Watch them closely to prevent burning.

Optional Toppings to Make Chips ino Tartines: Red or Green Pesto (see sauce section) and slice of avocado and a pinch of sprouts.
