The Secret’s Sauce For Any Food

You know those great black pants in the closet that match with almost anything you wanna wear? They are essential, right? Or it might be a pair of well-fitting jeans. Well, take this idea to the kitchen. I’ve lately been on a sauce kick, offering up a variety of sauces, salsa’s or other condiments to go with quick and easy meals to make them taste delicious and look even fancier. Even better, having one, two or three of your favorite sauces on hand allows you to mix and match your meals throughout the week while only cooking basic food such as fish, veggies and rice in the simplest way.

My younger son, who tends to be a bit picky, wasn’t quite liking my sauce concept, but I wanted him to see how different his food would taste with something with it. After offering up a variety of options to go with his salmon, he finally said, “How about sunbutter mom?” Sunbutter? “Well sure, why not!” I said. And sure enough, he loved eating his salmon with sunbutter on it. You just never know what combos might go well together.

Below are recipes for my three favorite sauces and toppings, at the moment. These recipes are all part of the upcoming Autumn Detox and lots more of course. You see, I am a big believer in discovering new foods and recipes that are both delicious, pleasing to the eye and good for you. This is exactly what we will be doing during this 10-day clean eating journey! Sauce For Any Food — Recipes!

Mango Salsa

[Goes great on top of chicken or fish. ]

Ingredients:
2 mangoes, peeled and diced small
1 small red onion, finely diced
½ red bell pepper, finely diced
1 small jalapeno pepper, seeded and minced
2 to 3 Tbsp freshly squeezed lime juice, or to taste
sea salt, to taste

Optional:
If you have a good avocado on hand, you could dice it and add it to this salsa.

Directions:
Mix all ingredients in a bowl


 

Cashew Sauce

[Amazing with lettuce wraps or nori rolls or on top of fresh or roasted veggies]

Ingredients:
1/2 cup cashews, soaked for 4-5 hrs
1/4 cup sesame oil
¼ cup tamari sauce
2 Tbsp lime juice
2-3 dates, pit removed
1/2 – 1 tsp sea salt
Pinch of cayenne
Black pepper to taste

Directions:
Put all ingredients into a blender and blend until well mixed. It is a strong tasting sauce so a little goes a long way


Red Cashew Pesto

[Try this inside lettuce or collard green wraps or add it to a bowl of quinoa and cut up veggies.]

Ingredients:
1 jar sun-dried tomatoes in olive oil
1 ½ cup raw cashew nuts (ideally soaked for 6 hours or overnight)
1 tsp. sea salt
1 Tbsp lemon juice
1-2 pitted Medjool dates (if they are very dry, put them in hot water for a few minutes to soften before putting them in the blender)
Pinch of cayenne pepper (optional)

Directions:
Put all ingredients into a blender and blend until well mixed.
